Roasted Egg Plant

1/2 an egg plant per person
Crushed garlic
Lemon juice
Salt
Red capsicum
Parsley

Roast entire egg plant in oven until soft.

Scrap out the egg plant.

Place in blender with garlic, parsley and lemon. Blend together.

Cut capsicum in half lengthwise. Deseed. Bake in oven for 10 minutes.

Fill with egg plant mix and place back in the oven if the mix has cooled to warm through.
