125g butter, softened (901Cal)>
1 cup castor sugar (814 Cal)>
2 eggs (131 Cal)>
1 cup self raising flour (527 Cal)>
1 cup corn flour (530 Cal)
Strawberry Jam, for spreading (40 Cal per gram)
Icing sugar, for dusting (4 Cal per gram)
Preheat oven to 190C. Line baking trays with baking paper (being a bit of a greeny, I use a silicon mat).
Cream butter and sugar together until light and fluffy (hand mixer is fine). Beat eggs in 1 at a time. Mix in sifted flour and cornflour.
Drop teaspoonfuls onto trays and bake for 8 - 10 minutes, or until just pale golden brown.
When cold, sandwich together with jam and dust with icing sugar.
Makes approx. 24 (although I got 17)
